Zucchini and Ricotta Fritters

Zucchini and ricotta fritters are a simple and tasty dish. Here is the recipe to prepare them:

Ingredients

  • 2 medium zucchini
  • 250 g ricotta
  • 1 egg
  • 80-100 g flour (depending on the consistency of the batter)
  • 50 g grated Parmesan
  • Salt and pepper to taste
  • Nutmeg (optional)
  • Oil for frying

Preparation

  1. Start by washing the zucchini and grating them with a coarse grater.
  2. Place the grated zucchini in a colander, lightly salt them and let them rest for about 10 minutes to release excess water, then squeeze them well.
  3. In a bowl, combine the squeezed zucchini, ricotta, egg, Parmesan, a pinch of salt, a bit of pepper and, if desired, a grating of nutmeg. Mix the ingredients well.
  4. Gradually add the flour until you obtain a mixture that is not too liquid but still soft.
  5. Heat plenty of oil in a pan and, when it is very hot, start frying the fritters: scoop a bit of the mixture with a spoon and let it slide into the oil.
  6. Cook the fritters until they are golden on both sides, turning them halfway through cooking.
  7. Drain them from the oil and place them on paper towels to remove excess oil.
