Zucchini Casserole

Here is a simple and tasty recipe for a zucchini casserole:

Ingredients

  • 4 medium zucchini
  • 200 g ricotta
  • 100 g grated Parmesan
  • 2 eggs
  • 150 g smoked provola (or mozzarella)
  • 200 ml bechamel
  • Salt and pepper to taste
  • Extra virgin olive oil to taste
  • Breadcrumbs to taste

Preparation

  1. Wash the zucchini and cut them into thin rounds or strips. If you prefer, you can lightly grill them to enhance the flavor.
  2. In a bowl, mix the ricotta with the eggs, grated Parmesan, salt, and pepper until you obtain a homogeneous mixture.
  3. Cut the smoked provola into cubes.
  4. In a baking dish, grease the bottom with a drizzle of oil and sprinkle with some breadcrumbs.
  5. Arrange a layer of zucchini on the base of the baking dish, cover with part of the ricotta mixture and some provola cubes.
  6. Continue with a layer of bechamel.
  7. Alternate the layers until all ingredients are used, making sure to finish with a layer of bechamel and a sprinkle of Parmesan.
  8. Bake in a preheated oven at 180 °C for about 30-40 minutes, until the casserole is golden and the surface is well browned.
  9. Let it rest for a few minutes before serving.
