Zucchini Puff Pastries

Zucchini puff pastries are a tasty appetizer and also quite simple to prepare. Here is the recipe for some delicious puff pastries.

Ingredients

  • 2 medium zucchini
  • 1 roll of rectangular puff pastry
  • 100 g of spreadable cheese (such as Philadelphia)
  • 50 g of grated parmesan
  • 1 egg (for brushing)
  • Salt and pepper to taste.
  • Extra virgin olive oil to taste.
  • Aromatic herbs to taste (for example thyme or mint)

Preparation

  1. Preheat the oven to 180 °C.
  2. Wash the zucchini and slice them thinly lengthwise. You can use a mandoline to get even slices.
  3. Beat the egg in a bowl and set it aside.
  4. Roll out the puff pastry and cut it into squares or rectangles of about 8x8 cm or 10x5 cm.
  5. Spread each piece of puff pastry with the spreadable cheese, then sprinkle some grated parmesan on top.
  6. Arrange the zucchini slices on each prepared piece, slightly overlapping them and brush them with a little extra virgin olive oil. Add salt, pepper and the chosen aromatic herbs.
  7. Gently roll the pastry with the filling to form rolls.
  8. Brush each roll with the beaten egg and sprinkle another handful of grated parmesan.
  9. Place the rolls on a baking tray lined with parchment paper.
  10. Bake at 180 °C for about 15-20 minutes, or until the puff pastries are puffed and golden.
  11. Remove from the oven and let cool slightly before serving.
