Zucchini Roll Skewers
17/11/2023Zucchini roll skewers are a tasty appetizer that can be prepared with various ingredients. Usually, they consist of slices of meat or fish rolled up with vegetables or cheeses inside. Here is a variation with zucchini and cured ham.
Ingredients
- 2 zucchine
- 100 g thinly sliced prosciutto crudo
- 100 g spreadable cheese (such as Philadelphia)
- Extra virgin olive oil
- Salt and pepper to taste
- Wooden skewers
Preparation
- Wash the zucchini and slice them lengthwise into thin strips using a mandoline or a sharp knife.
- Heat a grill or non-stick pan and grill the zucchini slices on both sides until soft and marked with typical grill lines.
- Once cooled, spread a generous amount of spreadable cheese on each zucchini slice.
- Place a slice of prosciutto crudo at one end of each zucchini slice, then roll the slices starting from the prosciutto side to form the rolls.
- Thread the rolls onto skewers, alternating them and ensuring the prosciutto is well secured.
- Before serving, brush each skewer with a drizzle of oil and add a pinch of salt and pepper.
You can quickly pass the skewers over a hot griddle or grill for a more appetizing effect and to make the prosciutto crispy. Alternatively, they can be served as is for a fresher and lighter result.

This dish can be varied in multiple ways by changing the type of vegetables, cheese, or meat. For example, grilled eggplant is an excellent alternative to zucchini, and cooked ham or speck can replace the prosciutto for a different flavor.
