Chicken and Chicory Involtini

Chicken and chicory rolls are a tasty dish that combines the delicacy of chicken with the slight bitterness of chicory. Here is the recipe with an Italian touch:

Ingredients

  • Chicken breast cut into thin slices: 4
  • Chicory: 200 g
  • Garlic: 1 clove
  • Extra virgin olive oil: to taste
  • White wine: 100 ml
  • Salt: to taste
  • Pepper: to taste
  • Cooked or raw ham in thin slices: 4
  • Scamorza or other soft cheese in slices: 4

Preparation

  1. Start by cleaning the chicory and cooking it in a pan with a drizzle of oil and a clove of garlic until it has softened. Salt it lightly and set it aside.
  2. Lay out the chicken slices and flatten them slightly with a meat mallet. Salt and pepper them on both sides.
  3. On each chicken slice, place a slice of ham and one of cheese, then add some cooked chicory.
  4. Roll the stuffed chicken slices onto themselves forming rolls and secure them with a toothpick to keep them closed.
  5. In a non-stick pan, heat a drizzle of oil and brown the rolls on all sides until golden.
  6. Deglaze with white wine and let the alcohol evaporate.
  7. Lower the heat, cover with a lid and cook for about 15-20 minutes, turning the rolls occasionally.
  8. Adjust salt and pepper if necessary, and serve the rolls hot.

Chicken rolls can be customized in many ways. In Italy, for example, they are stuffed with typical ingredients like ham and scamorza, but you could also use spinach instead of chicory or enrich the filling with chopped walnuts for a crunchy touch.
