Chicken and Green Bean Involtini

Chicken and green bean involtini are a light and flavorful dish that works well both as a main course and as a one-plate meal when served with a side of rice or salad. Here is the recipe to prepare Italian-style chicken and green bean involtini:

Ingredients

  • 4 thin chicken breasts
  • 200 g fresh green beans
  • 4 slices prosciutto crudo (optional)
  • 4 tablespoons grated Parmesan
  • Salt and pepper to taste
  • Extra-virgin olive oil
  • 1 garlic clove
  • White wine for deglazing

Preparation

  1. Start by cleaning the green beans: remove the ends and rinse them under running water. Then blanch them in boiling salted water for about 5-7 minutes until they soften but remain crisp. Once ready, drain and plunge them into ice water to preserve their bright color.

  2. Meanwhile, flatten the chicken breasts further with a meat mallet, taking care not to tear them, then season with salt and pepper.

  3. Now assemble the rolls: on each chicken breast, lay a slice of prosciutto, a little grated Parmesan, and some green beans. Roll up the chicken breast to enclose the filling and secure the rolls with toothpicks or kitchen twine.

  4. Heat a drizzle of extra-virgin olive oil in a skillet with a garlic clove in its skin. When the oil is hot, add the rolls and brown them on all sides. Deglaze with a splash of white wine and let the alcohol evaporate.

  5. Lower the heat, cover with a lid, and cook for about 15-20 minutes, turning the rolls occasionally, until they are fully cooked inside.

  6. Once cooked, remove them from the skillet and discard the toothpicks or twine.

Serve the chicken and green bean involtini hot, perhaps with an extra dusting of Parmesan and a drizzle of raw extra-virgin olive oil.
