Chocolate Chip Buns

Ingredients

  • 500 g of 00 flour
  • 250 ml of lukewarm milk
  • 12 g of fresh brewer’s yeast
  • 80 g of granulated sugar
  • 1 medium egg
  • 60 g of soft butter
  • A pinch of salt
  • 1 teaspoon of vanilla extract (optional)
  • 150 g of chocolate chips
  • A little milk or beaten egg for brushing

Preparation

  1. In a large bowl, dissolve the brewer’s yeast in the lukewarm milk with a teaspoon of sugar taken from the total amount.
  2. Pour the flour into a large bowl or the bowl of a stand mixer, add the remaining sugar and mix.
  3. Add the milk and yeast mixture to the center, the lightly beaten egg, the soft butter cut into pieces, the salt and the vanilla extract, if you are using it.
  4. Knead the ingredients with a wooden spatula or use the stand mixer with the hook until you obtain a homogeneous mixture.
  5. Add the chocolate chips and continue kneading until they are well distributed in the dough.
  6. Transfer the dough to a lightly floured surface and continue kneading by hand for a few minutes.
  7. Form a ball with the dough, place it in a lightly greased bowl, cover with a damp cloth and let it rise in a warm place for about 1-2 hours or until it has doubled in volume.
  8. Take the risen dough and divide it into pieces of equal weight. Shape small buns with each and arrange them on a baking tray lined with parchment paper, leaving a little space between them.
  9. Let rise again for about 30 minutes.
  10. Meanwhile, preheat the oven to 180 °C.
  11. Before baking the buns, gently brush them with a little milk or beaten egg to obtain a golden surface.
  12. Bake in the oven for about 15-20 minutes or until the buns are puffed and golden.
  13. Let cool on a wire rack before serving.
