Coconut Plumcake with Chocolate Heart

Ingredients

  • 200 g of 00 flour
  • 100 g of coconut flour
  • 150 g of sugar
  • 100 ml of seed oil
  • 50 ml of coconut milk (you can also use regular milk)
  • 3 eggs
  • 1 packet of baking powder
  • 1 pinch of salt
  • 100 g of dark chocolate

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, beat the eggs with the sugar until you obtain a frothy and pale mixture.
  3. Add the seed oil slowly while continuing to whisk.
  4. Add the coconut milk and mix well.
  5. Gradually add the sifted flour, coconut flour, baking powder, and salt, combining all the ingredients well without forming lumps.
  6. Pour half of the batter into a plumcake pan previously buttered and floured.
  7. Cut the dark chocolate into small pieces or use chocolate chips and distribute it over the first layer of batter in the plumcake.
  8. Cover with the remaining batter, leveling the surface well.
  9. Bake the plumcake for about 40 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the plumcake cool in its pan for a few minutes, then transfer it to a wire rack to cool completely.
