Coffee Spiral Cake

Ingredients

  • 4 eggs
  • 120 g sugar
  • 120 g 00 flour

  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 2 tablespoons cold espresso coffee
  • 250 g mascarpone
  • 100 g powdered sugar
  • Unsweetened cocoa powder to taste for decoration

Preparation

  1. Start by separating the yolks from the whites. Beat the yolks with the sugar until you obtain a light and foamy mixture.
  2. Add the sifted flour, vanillin, and salt to the egg and sugar mixture. Mix gently.
  3. Whip the egg whites to stiff peaks and fold them into the mixture, being careful not to deflate them.
  4. Divide the obtained batter into two parts. To one half add the cocoa powder and one tablespoon of cold coffee, mixing until you get a homogeneous mixture.
  5. Prepare two rectangular baking pans lined with parchment paper and pour one of the batters into each, leveling them.
  6. Bake both sheets of dough in a preheated oven at 180 °C for about 10-12 minutes. They should be soft but not too dry.
  7. Meanwhile, prepare the cream: mix the mascarpone with the powdered sugar and the remaining tablespoon of coffee to obtain a smooth cream.
  8. When the cake bases are cool, spread the mascarpone cream on the cocoa dough, then roll the dough to form a cylinder.
  9. Place the cylinder in the center of the non-cocoa dough and proceed to roll it around the cocoa cylinder.
  10. Once the spiral is formed, wrap the cake in plastic wrap and let it rest in the refrigerator for at least an hour.
  11. Before serving, dust the surface with cocoa powder for a final touch.
