Coffee Spumone

Ingredients

  • 300 ml cold espresso coffee
  • 200 ml whipping cream
  • 100 g granulated sugar
  • 3 egg whites
  • 30 g powdered sugar

  1. Prepare the espresso coffee and let it cool completely.
  2. Whip the cream with half of the granulated sugar until stiff and set aside.
  3. In a separate bowl, beat the egg whites until stiff, gradually adding the remaining granulated sugar.
  4. Gently fold the whipped cream into the egg whites, being careful not to deflate the mixture.
  5. Add the cold coffee to the cream and egg white mixture, stirring gently from top to bottom to maintain aeration.
  6. Pour the mixture into a spumone mold or individual cups.
  7. Place in the freezer for at least 4 hours, or until the spumone is well solidified.
  8. Before serving, let the spumone sit at room temperature for a few minutes to make slicing or removing from the cups easier.
  9. Dust with cocoa powder before serving for a final touch of flavor and decoration.
