Coffee Spumone

Ingredients
- 300 ml cold espresso coffee
- 200 ml whipping cream
- 100 g granulated sugar
- 3 egg whites
- 30 g powdered sugar
- Cocoa powder for decoration
Preparation
- Prepare the espresso coffee and let it cool completely.
- Whip the cream with half of the granulated sugar until stiff and set aside.
- In a separate bowl, beat the egg whites until stiff, gradually adding the remaining granulated sugar.
- Gently fold the whipped cream into the egg whites, being careful not to deflate the mixture.
- Add the cold coffee to the cream and egg white mixture, stirring gently from top to bottom to maintain aeration.
- Pour the mixture into a spumone mold or individual cups.
- Place in the freezer for at least 4 hours, or until the spumone is well solidified.
- Before serving, let the spumone sit at room temperature for a few minutes to make slicing or removing from the cups easier.
- Dust with cocoa powder before serving for a final touch of flavor and decoration.
