Cookie Cake

Cookie cake is a dessert that combines the softness of a cake with the crunchiness and taste of a cookie. It is a recipe particularly loved for breakfast or snack time and can be enriched with chocolate chips, nuts or whatever you prefer. Here is the basic recipe:

Ingredients

  • 180 g soft butter
  • 150 g brown sugar
  • 50 g granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 300 g all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 150 g chocolate chips or chopped chocolate

Preparation

  1. Preheat the oven to 180 °C and prepare a round cake pan by lightly buttering and flouring it.
  2. In a large bowl, cream the butter with the brown sugar and granulated sugar until light and fluffy.
  3. Add the egg and egg yolk one at a time, continuing to beat, then add the vanilla extract.
  4. In a second bowl, mix the flour, baking soda and salt.
  5. Combine the dry ingredients with the butter and egg mixture, stirring until a homogeneous dough is obtained.
  6. Add the chocolate chips to the dough and stir to distribute them evenly.
  7. Pour the dough into the prepared pan and level it with a spatula.
  8. Bake for about 20-25 minutes or until the surface is golden and a tester inserted in the center comes out clean.
  9. Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.

This cake is a fusion between two worlds, that of American sweets with their generous chocolate and intense flavors, and that of more classic pastry. The peculiarity lies in maintaining an almost “giant cookie” texture inside, while the outside should be slightly crunchy just like a real cookie. You can customize it in a thousand ways, by adding dried fruit, M&M’s, marshmallows for an even more indulgent version, or replacing part of the flour with cocoa for a double chocolate version.
