Creamy Strawberry Cake
17/11/2023The creamy strawberry cake is a delicious dessert that celebrates the fresh flavor of this fruit. Here is a recipe you can follow to prepare a creamy strawberry cake with an Italian touch.
Ingredients
For the base:
- 200 g dry biscuits (Digestive type)
- 100 g melted butter
For the cream:
- 500 g mascarpone
- 200 ml whipping cream
- 100 g powdered sugar
- 1 packet of vanillin
- 200 g fresh strawberries
For decoration:
- Fresh strawberries as needed
- Powdered sugar as needed
Preparation
- Start by crushing the dry biscuits until you obtain a coarse flour. You can do this with a blender or by placing them in a bag and rolling over them with a rolling pin.
- Melt the butter and mix it with the crushed biscuits until you have a homogeneous mixture.
- Line the bottom of a springform pan (preferably 22-24 cm in diameter) with parchment paper and distribute the biscuit mixture, pressing well with the back of a spoon to create a compact base. Place in the refrigerator to cool for about 30 minutes.
- For the cream, whip the whipping cream until stiff and set it aside. In another bowl, work the mascarpone with the powdered sugar and vanillin until you have a smooth cream.
- Gently fold the whipped cream into the mascarpone mixture, trying not to deflate it. Add the strawberries previously washed, dried and cut into small pieces.
- Pour the obtained cream onto the biscuit base and level the surface with a spatula. Refrigerate for at least 4 hours, preferably overnight.
- Before serving, decorate with fresh strawberries cut into slices or as you prefer and, if you like, a dusting of powdered sugar.

The creamy strawberry cake lends itself to numerous variations, for example you could add melted white chocolate to the mascarpone cream or flavor it with grated lemon zest to give an extra touch of freshness. In Italy, the combination of the sweetness of mascarpone and strawberry is loved, often present in more creative versions of tiramisu or semifreddo.
