Lasagne with White Ragù and Vegetables

Lasagne with white ragù and vegetables are an excellent variant of the more classic lasagne with red ragù. Using seasonal vegetables, you can obtain a flavorful and lighter dish. Here is the recipe to prepare this delicious pie.

Ingredients

  • 250 g fresh lasagne (or dry that do not require pre-cooking)
  • 300 g ground meat (you can choose beef, pork or a mix of the two)
  • 1 carrot
  • 1 celery stalk
  • 1 white onion
  • 200 g button mushrooms
  • 1 zucchini
  • 1 red bell pepper
  • 50 g butter
  • 500 ml béchamel
  • 100 g grated Parmesan
  • Extra virgin olive oil
  • Salt and pepper
  • Nutmeg

Preparation

  1. To start, prepare the soffritto by finely chopping the carrot, celery and onion and sautéing them in a pan with a drizzle of extra virgin olive oil.
  2. Add the ground meat and cook until golden, stirring often.
  3. Meanwhile, clean and cut the vegetables (mushrooms, zucchini and bell pepper) into small, uniform cubes.
  4. When the meat is well browned, add the vegetables to the pan and cook for about 10 minutes. Adjust salt and pepper, and if you like you can also add a pinch of nutmeg.
  5. Prepare the béchamel by melting the butter in a pot, adding the flour and then gradually pouring in the warm milk. Cook, stirring, until it thickens, then adjust with salt, pepper and a grating of nutmeg.
  6. Take a baking dish and start assembling the lasagne: a first layer of béchamel, then place the lasagne sheets on top, then add the white ragù with vegetables and sprinkle with grated Parmesan.
  7. Continue layering until the ingredients are used up, finishing with béchamel and a generous dusting of Parmesan.
  8. Bake in a preheated oven at 180 °C for about 30-40 minutes, until the surface is nicely golden and crispy.
  9. Let the lasagne rest for about 10 minutes before serving.
