Lasagne with Zucchini, Confit Tomatoes and Sausage

Ingredients
- 250 g egg lasagne (you can also use those that do not require pre-cooking)
- 3 medium zucchini
- 500 g fresh sausage
- 200 g confit tomatoes (or sun-dried tomatoes in oil, if you can’t find them)
- 250 g mozzarella
- 100 g grated Parmesan
- Salt and pepper to taste
- Extra virgin olive oil
- Fresh basil (for garnish)
For the béchamel:
- 50 g butter
- 50 g flour
- 500 ml milk
- Salt
- Nutmeg
Preparation

Start by preparing the béchamel. Melt the butter in a saucepan, add the flour and whisk, cooking for a couple of minutes. Gradually add the warm milk, continuing to stir to avoid lumps. Season with salt and nutmeg and cook over medium heat until the béchamel thickens. Set aside.

Cut the zucchini into thin rounds and sauté quickly in a pan with a drizzle of oil, salt and pepper until lightly golden.

Remove the skins from the sausage, crumble it and brown in a pan with a little oil until well cooked and crispy.

Slice the confit tomatoes and mozzarella, and grate the Parmesan if not already prepared.

Begin assembling the lasagne in a baking dish lightly greased with oil. Spread a first layer of béchamel on the bottom, then add a layer of lasagne sheets, more béchamel, zucchini, pieces of sausage, confit tomatoes and mozzarella. Sprinkle with Parmesan and repeat the layers until all ingredients are used, finishing with béchamel, Parmesan and a few pieces of mozzarella on top.

Bake in a preheated oven at 180 °C for about 30 minutes or until golden as desired.

Let rest for 10 minutes before serving and garnish with fresh basil leaves.
