Lemon Plumcake

Ingredients
- 200 g 00 flour
- 200 g granulated sugar
- 3 eggs
- 100 g softened butter or sunflower seed oil
- Grated zest of 2 untreated lemons
- Juice of 1 lemon
- 1 packet baking powder
- A pinch of salt
- Powdered sugar (optional, for decoration)
Preparation
- Preheat the oven to 180 °C and butter and flour a plumcake pan.
- In a bowl, cream the softened butter (or oil) with the sugar until light and fluffy.
- Add the eggs one at a time, continuing to mix after each addition until fully incorporated.
- Add the grated lemon zest and lemon juice, mixing everything well.
- In another bowl, sift the flour with the baking powder and the pinch of salt.
- Fold the sifted flour into the wet mixture, stirring gently to avoid lumps.
- Pour the batter into the prepared pan and level it with a spatula.
- Bake the plumcake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Let the plumcake cool in the pan for about 10 minutes, then transfer it to a wire rack to finish cooling.
- Once cooled, if desired, dust the plumcake with powdered sugar to decorate.
Trivia
Plumcake, despite its name, does not include plums (plum in English) in its original British version. However, it has become a generic term for elongated baked goods. The lemon version is especially appreciated for its fresh, aromatic flavor.
