Lemon Plumcake without Butter

Ingredients
- 200 g of 00 flour
- 200 g of plain yogurt (low-fat or full-fat, depending on preference)
- 150 g of sugar
- 3 eggs
- The grated zest of 2 untreated lemons
- The juice of 1 lemon
- 80 ml of sunflower or corn seed oil
- 1 packet of baking powder
- 1 pinch of salt
Preparation
- Preheat the oven to 180 °C.
- Butter and flour a plumcake mold or line it with parchment paper to prevent the cake from sticking.
- In a bowl, beat the eggs with the sugar until you obtain a light and foamy mixture.
- Then add the yogurt and continue mixing.
- Incorporate the oil in a thin stream, stirring gently to avoid deflating the mixture.
- Add the grated zest and lemon juice.
- In another bowl, sift the flour with the baking powder and salt.
- Add the dry ingredients to the liquid mixture, stirring with a spatula or wooden spoon using gentle top-to-bottom movements to avoid deflating the batter.
- Pour the batter into the prepared mold and bake it.
- Bake in the preheated oven for about 35-40 minutes or until a toothpick inserted into the center of the plumcake comes out clean. If the cake browns too much on the surface before it’s cooked inside, cover it with a sheet of aluminum foil.
- Remove the plumcake from the oven and let it cool before unmolding.
