Mixed Berry Tiramisu

Mixed Berry Tiramisu is a variant of the classic Italian dessert that combines the creaminess of mascarpone and the sweetness of mixed berries. It is a fresh and colorful dessert, perfect for summer or for those who prefer a touch of acidity instead of coffee. Here is the recipe:

Ingredients

  • 250 g mascarpone
  • 100 g powdered sugar
  • 3 eggs (with yolks separated from whites)
  • 300 g mixed berries (e.g. strawberries, blueberries, raspberries, blackberries)
  • 200 g ladyfingers or pavesini
  • Berry fruit juice or liqueur of choice for soaking the cookies
  • Granulated sugar (optional, to sweeten the juice or liqueur)
  • Mixed berries for garnish
  • Fresh mint for garnish (optional)
  • Unsweetened cocoa powder for dusting (optional)

Preparation

  1. Start by separating the egg yolks from the whites.
  2. Whip the yolks with the powdered sugar until you obtain a light and frothy cream.
  3. Add the mascarpone to the whipped yolks and mix gently until you obtain a homogeneous cream.
  4. In another bowl, whip the egg whites to stiff peaks. If desired, you can add a pinch of salt to help with whipping.
  5. Gently fold the whipped egg whites into the mascarpone cream, using a spatula and bottom-to-top movements to avoid deflating the mixture.
  6. In a baking dish or individual glasses, begin assembling your Tiramisu by arranging a layer of ladyfingers previously soaked in the berry juice or chosen liqueur. If the liqueur or juice is too tart, you can sweeten it with a little granulated sugar.
  7. Spread a layer of mascarpone cream over the cookies, followed by a layer of fresh berries.
  8. Continue with another layer of soaked ladyfingers, then again the cream and berries, until all ingredients are used up.
  9. Finish with a layer of cream and decorate with fresh berries and, if desired, dust with a little unsweetened cocoa powder.
  10. Let the Tiramisu rest in the refrigerator for at least 3-4 hours before serving, to allow the ladyfingers to absorb the flavors and the cream to set.

Garnish with fresh mint leaves just before serving for a touch of color and freshness.
