Mixed Berry Yogurt Mousse

Ingredients
- 250 grams of Greek yogurt or good quality
- 200 grams of mixed forest berries (raspberries, blackberries, blueberries, wild strawberries)
- 100 ml of fresh whipping cream
- 70 grams of powdered sugar (or less, according to your sweetness preference)
- 2 sheets of gelatin (or agar agar if you prefer a vegetarian option)
- 1 lemon (the grated zest)
- Fresh mint for garnish
Preparation
- Start by soaking the gelatin sheets in a bowl of cold water for about 10 minutes, until they become soft.
- Meanwhile, heat a small amount of the berries in a saucepan with a tablespoon of powdered sugar, just long enough to dissolve the sugar and create a light syrupy mixture. Do not overcook to preserve some of the berries’ freshness.
- Squeeze the softened gelatin and add it to the warm fruit mixture, stirring until completely dissolved.
- In a bowl, combine the yogurt with the grated lemon zest and the remaining powdered sugar.
- Whip the fresh cream until firm and gently fold it into the yogurt mixture.
- Add the berry and gelatin mixture to the rest and stir gently to create a marbled effect.
- Divide the mousse into glasses or bowls and let it rest in the refrigerator for at least 3-4 hours, until the mousse has set.
- When ready to serve, decorate with fresh berries and mint leaves.
