Mixed Fruit Fritters
17/11/2023Mixed fruit fritters are a delicious dessert and an interesting variation on more classic fried dishes. As with every respectable Italian recipe, the key is to choose fresh, high-quality seasonal fruit. Here’s what you need to prepare mixed fruit fritters:
Ingredients
- Assorted fruit of your choice (apples, pears, bananas, pineapple, etc.)
- 150 g flour
- 200 ml cold light beer
- 1 pinch of salt
- Powdered sugar to taste
- Oil for frying
For the batter:
- 110g 00 flour
- 140ml cold sparkling water
- 1 egg white
- 30g sugar

Start by preparing the batter: pour the sifted flour into a bowl and gradually add the cold light beer. Mix well to avoid lumps. Add a pinch of salt and, if desired, a little powdered sugar. Let the batter rest in the fridge for about 30 minutes.

While the batter rests, clean and cut the fruit into pieces that aren’t too small. For example, you can cut an apple or pear into wedges, a banana into rounds, and pineapple into cubes. Make sure the pieces are large enough not to break during frying.

Heat plenty of oil in a large pan or deep fryer. The oil is ready when small bubbles form around a wooden skewer dipped into it.

Meanwhile, whip the egg white to stiff peaks and gently fold it into the cold batter to make it lighter and crispier.

Dip the fruit pieces in the batter, ensuring it adheres well to the surface.

Fry the fruit pieces a few at a time to avoid lowering the oil temperature too much and to prevent them from sticking together.

Once the fruit pieces are golden and crispy, remove them from the oil with a slotted spoon and drain on paper towels to remove excess oil.

Dust the still-warm fried fruit with powdered sugar before serving.
Trivia
Mixed fruit fritters can be served on their own or accompanied by ice cream or a fresh fruit coulis. The batter can be flavored with vanilla, cinnamon, or even liqueurs to enhance the fruit’s flavor. Although little known outside Italy, it’s a delight that immediately wins over anyone who tries it!
