Mocha Cake
17/11/2023The mocha cake is a classic Italian dessert that combines the goodness of coffee with the sweetness of cream. Here is the recipe to prepare a delicious mocha cake.
Ingredients
- 4 eggs
- 200 g sugar
- 200 g 00 flour
- 1 packet baking powder
- 200 g softened butter
- 2 tablespoons instant coffee (or cooled espresso)
- 500 ml milk
- 4 tablespoons sugar (for the cream)
- 45 g flour (or cornstarch)
- 200 g dark chocolate
- Unsweetened cocoa powder for decoration
For the soak:
- Coffee as needed
- Sugar as needed
- Coffee liqueur (optional)
For the coffee buttercream:
- 150 g softened butter
- 300 g powdered sugar
- 2 tablespoons instant coffee (or cooled espresso)
Preparation
- Start with the cake base: beat the eggs with the sugar until the mixture is frothy and pale.
- Add the sifted flour and baking powder, mixing gently from the bottom up to avoid deflating the batter.
- Melt the butter and let it cool slightly. Add it to the mixture along with the 2 tablespoons of instant coffee previously dissolved in a little water (or the cooled espresso). Combine everything.
- Pour the batter into a buttered and floured 24 cm pan and bake in a preheated oven at 180 °C for about 30 minutes.
- While the base is baking, prepare the coffee custard. In a saucepan, heat the milk without bringing it to a boil. In another saucepan, beat the egg yolks with the sugar and sifted flour, then add the hot milk a little at a time while continuing to stir.
- Return the mixture to the heat and let it thicken without ever stopping stirring. Once ready, add the instant coffee or espresso and mix well.
- For the coffee buttercream, beat the softened butter with the powdered sugar until smooth, then incorporate the instant coffee dissolved in a little water (or the espresso) and continue whipping until fluffy.
- When the cake base is baked and cooled, slice it into two or three horizontal layers. Soak each layer with the coffee soak (and a little coffee liqueur if desired).
- Spread a layer of coffee custard between the cake layers and cover the top and sides with the coffee buttercream as well.
- Melt the chocolate in a double boiler and use it to create decorative drizzles on the cake. Let cool to harden the chocolate.
- Before serving, dust the cake with unsweetened cocoa powder for an elegant finish.
