Pasta with Salmon and Peas

Ingredients
- 320 g of pasta (penne, farfalle or spaghetti)
- 200 g of smoked salmon
- 150 g of fresh or frozen peas
- 1 shallot
- 200 ml of cooking cream
- 1/2 glass of dry white wine
- Extra virgin olive oil (to taste)
- Salt and pepper (to taste)
- 1 bunch of fresh dill (optional)
- 1 teaspoon of lemon juice (optional)
Preparation

Start by bringing a pot of salted water to a boil to cook the pasta. Once the water reaches a boil, cook the pasta according to the package instructions for al dente texture.

While waiting for the water to boil, finely chop the shallot and cut the smoked salmon into strips.

In a large skillet, heat a little extra virgin olive oil and sauté the chopped shallot until it becomes translucent.

Add the peas to the skillet and let them cook for a few minutes, seasoning with salt and pepper.

Deglaze with the white wine and let the alcohol evaporate.

Add the smoked salmon and let it cook for a couple of minutes.

Pour in the cooking cream and simmer over low heat until the sauce begins to thicken slightly. If desired, add a teaspoon of lemon juice for a touch of freshness to the sauce.

Drain the al dente pasta and transfer it to the skillet with the sauce. Gently stir to combine the pasta with the salmon and pea sauce.
