Ingredients

  • 320 g of pasta (short pasta like penne or farfalle)
  • 200 g of smoked salmon
  • 2 medium potatoes
  • 1 small onion
  • 200 ml of cooking cream
  • Extra virgin olive oil
  • Salt and black pepper to taste
  • A sprig of fresh dill (optional)
  • Lemon juice (optional)

Preparation

  1. Start by washing the potatoes and cutting them into cubes of about 1 cm. Place them in a pot with salted water and bring to a boil. Cook until tender but still firm.

  2. Meanwhile, finely slice the onion and sauté it in a pan with a drizzle of extra virgin olive oil. As soon as the onion becomes translucent, add the drained potato cubes and let them brown for a few minutes.

  3. Cut the smoked salmon into strips and add it to the pan with the potatoes. Let the salmon gently absorb the flavors, being careful not to overcook it to avoid drying it out.

  4. Deglaze with a little lemon juice if you prefer acidity, then pour in the cream. Allow the mixture to heat through and form a smooth cream. Adjust salt and pepper.

  5. Meanwhile, bring another pot of water to a boil, salt it, and cook the pasta al dente according to the package instructions.

  6. Drain the pasta, reserving some cooking water, and add it to the pan with the salmon and potato sauce. Mix well and add a little cooking water if needed to maintain the creaminess of the dish.

  7. Serve immediately, garnished with fresh dill on top and an extra grind of black pepper if desired.
