17/11/2023Pasta with swordfish and fava beans is a tasty dish full of Mediterranean flavors. Here’s how to prepare this delicious first course.
Ingredients
- 320 grams of short pasta (for example, penne or rigatoni)
- 200 grams of swordfish
- 200 grams of fresh or frozen fava beans
- 1 small white onion
- 100 ml of white wine
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Preparation
-
If using fresh fava beans, remove the first skin and, if necessary, blanch them briefly to facilitate removing the second skin. If using frozen fava beans, follow the instructions on the package for thawing.
-
Cut the swordfish into cubes about 2 cm on each side.
-
In a large non-stick pan, heat the extra virgin olive oil and sauté the sliced onion until it becomes translucent.
-
Add the swordfish cubes to the pan and cook them until they take on color on all sides.
-
Deglaze with white wine and let the alcohol evaporate over medium heat.
-
Add the fava beans to the pan with the swordfish, stir gently and cook for another 5-7 minutes, until the fava beans are tender. Adjust salt and pepper.
-
Meanwhile, cook the pasta in a pot with plenty of salted water, following the times indicated on the package to achieve al dente cooking.
-
Once the pasta is cooked, drain it and add it to the pan with the swordfish and fava beans sauce.
-
Toss it together with the sauce for a couple of minutes, so as to blend the flavors well.
-
Garnish with fresh chopped parsley and serve immediately.
Trivia
The swordfish has firm, flavorful meat that pairs well with the sweetness of the fava beans, creating a pleasant contrast on the palate. This dish is a celebration of the typical flavors of Sicilian cuisine, where swordfish is abundantly caught in the Mediterranean Sea.
