Pineapple Cake
17/11/2023I can suggest a classic recipe for the Pineapple Cake. It is a cake highly appreciated for its freshness and simplicity.
Ingredients
- 150 g of sugar
- 4 eggs
- 250 g of 00 flour
- 1 packet of baking powder
- 1 pinch of salt
- 100 ml of seed oil
- 100 ml of pineapple juice (you can use the one from the can of pineapple in natural juice)
- 7-8 slices of pineapple in syrup (or in natural juice, according to your preference)
- Powdered sugar for decoration (optional)
Preparation
- Preheat the oven to 180 °C (350 °F).
- In a large bowl, beat the eggs with the sugar until you obtain a frothy and light mixture.
- Slowly add the oil and pineapple juice while continuing to mix.
- In a separate bowl, sift the flour, baking powder, and a pinch of salt.
- Gently incorporate the dry ingredients into the egg, sugar, oil, and pineapple juice mixture, stirring with a spatula or wooden spoon until you obtain a homogeneous mixture without lumps.
- Grease and flour (or line with parchment paper) a 22-24 cm diameter pan. If you want to create the decorative effect, arrange the pineapple slices on the bottom of the pan.
- Gently pour the batter into the pan, covering the pineapple slices.
- Bake and cook for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for a few minutes, then turn the cake out onto a serving plate so that the base with the pineapple becomes the top of the cake.
- If desired, dust with powdered sugar before serving.
Trivia
The pineapple cake is often associated with the idea of upside-down cake, where the pineapple slices form a delicious and decorative caramelized top. This dessert has ancient origins: “upside-down” cakes were already known in Europe in the Middle Ages, but the modern version with pineapple spread widely with the advent of canned fruit preserves.
