Pineapple Cake

I can suggest a classic recipe for the Pineapple Cake. It is a cake highly appreciated for its freshness and simplicity.

Ingredients

  • 150 g of sugar
  • 4 eggs
  • 250 g of 00 flour
  • 1 packet of baking powder
  • 1 pinch of salt
  • 100 ml of seed oil
  • 100 ml of pineapple juice (you can use the one from the can of pineapple in natural juice)
  • 7-8 slices of pineapple in syrup (or in natural juice, according to your preference)
  • Powdered sugar for decoration (optional)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. In a large bowl, beat the eggs with the sugar until you obtain a frothy and light mixture.
  3. Slowly add the oil and pineapple juice while continuing to mix.
  4. In a separate bowl, sift the flour, baking powder, and a pinch of salt.
  5. Gently incorporate the dry ingredients into the egg, sugar, oil, and pineapple juice mixture, stirring with a spatula or wooden spoon until you obtain a homogeneous mixture without lumps.
  6. Grease and flour (or line with parchment paper) a 22-24 cm diameter pan. If you want to create the decorative effect, arrange the pineapple slices on the bottom of the pan.
  7. Gently pour the batter into the pan, covering the pineapple slices.
  8. Bake and cook for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Let the cake cool in the pan for a few minutes, then turn the cake out onto a serving plate so that the base with the pineapple becomes the top of the cake.
  10. If desired, dust with powdered sugar before serving.

The pineapple cake is often associated with the idea of upside-down cake, where the pineapple slices form a delicious and decorative caramelized top. This dessert has ancient origins: “upside-down” cakes were already known in Europe in the Middle Ages, but the modern version with pineapple spread widely with the advent of canned fruit preserves.
