Pineapple Fritters
17/11/2023Pineapple fritters are a delicious and exotic way to enjoy this fruit. Here’s how they are prepared Italian-style, with a sweet and crunchy touch.
Ingredients
- 1 ripe pineapple
- 150 grams of flour
- 2 eggs
- 50 grams of sugar
- 1 packet of baking powder
- A pinch of salt
- Milk as needed (quantity necessary to obtain a batter that is not too liquid)
- Oil for frying
- Powdered sugar (for dusting at the end)
Preparation
- Peel the pineapple and cut it into slices about 1 cm thick, remove the hard central core.
- In a bowl, sift the flour with the baking powder and a pinch of salt.
- In another bowl, lightly beat the eggs with the sugar until you obtain a frothy and light mixture.
- Combine the egg and sugar mixture with the flour and slowly add the milk, stirring constantly until you obtain a homogeneous batter without lumps, that coats the spoon but is not too thick.
- Heat plenty of oil in a pan. When hot (but not smoking), dip the pineapple slices in the batter to coat them completely and then fry them in the hot oil.
- Let the pineapple fritters brown on both sides, then drain them on paper towels to remove excess oil.
- Dust with powdered sugar before serving.
Pineapple fritters can be served both hot and at room temperature. For an even more Italian variant, you can also add a bit of liqueur to the batter, such as rum or grappa, which help give extra flavor and make the fritter even more fragrant.

In some cases, to make the dish even more special, you can opt to add spices like cinnamon or vanilla to the batter, creating an intriguing contrast with the tropical taste of the pineapple.
