Plum Cake

Ingredients
- 150 g sugar
- 150 g softened butter
- 3 eggs
- 300 g 00 flour
- 1 packet baking powder
- 1 pinch of salt
- 500 g ripe plums, pitted and halved
- 2 tablespoons brown sugar
- 1 tablespoon lemon juice
- Powdered sugar for finishing (optional)
- Butter and flour for greasing and flouring the cake pan
Preparation
- Preheat the oven to 180 °C and grease and flour a cake pan.
- In a bowl, beat the butter with the sugar until you obtain a homogeneous and fluffy mixture.
- Add the eggs one at a time, mixing well after each addition.
- Combine the sifted flour with the baking powder and a pinch of salt, incorporating everything gently.
- Pour the batter into the prepared cake pan.
- In a bowl, mix the plums with the brown sugar and lemon juice, then arrange them on top of the batter with the cut side facing up.
- Bake the cake and let it cook for about 40-50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
- Before serving, dust the cake with powdered sugar if desired.
