Plum Cake

Here is the classic recipe for a plum cake with an Italian touch.

Ingredients

  • 150 g sugar
  • 150 g softened butter
  • 3 eggs
  • 300 g 00 flour
  • 1 packet baking powder
  • 1 pinch of salt
  • 500 g ripe plums, pitted and halved
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • Powdered sugar for finishing (optional)
  • Butter and flour for greasing and flouring the cake pan

Preparation

  1. Preheat the oven to 180 °C and grease and flour a cake pan.
  2. In a bowl, beat the butter with the sugar until you obtain a homogeneous and fluffy mixture.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Combine the sifted flour with the baking powder and a pinch of salt, incorporating everything gently.
  5. Pour the batter into the prepared cake pan.
  6. In a bowl, mix the plums with the brown sugar and lemon juice, then arrange them on top of the batter with the cut side facing up.
  7. Bake the cake and let it cook for about 40-50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
  9. Before serving, dust the cake with powdered sugar if desired.
