Plum Cake

The plum cake is a rustic and delicious dessert, ideal to accompany afternoon tea or for a nutritious breakfast. Here’s the recipe:

Ingredients

  • 150 g sugar
  • 200 g 00 flour
  • 100 g softened butter
  • 2 eggs
  • 1/2 packet baking powder
  • A pinch of salt
  • 500 g plums
  • Brown sugar (to taste)
  • 1 teaspoon ground cinnamon (optional)
  • Grated lemon zest (optional)

Preparation

  1. Start by preheating the oven to 180 °C.
  2. Wash and pit the plums, then cut them in half or quarters depending on size.
  3. In a bowl, cream the softened butter with the sugar using an electric whisk or a spatula until you get a creamy mixture.
  4. Add the eggs one at a time, continuing to mix to blend everything well.
  5. Add the flour, baking powder and the pinch of salt, mixing until you have a smooth and homogeneous batter. If desired, add the cinnamon and lemon zest to flavor.
  6. Pour the batter into a previously buttered and floured pan or lined with parchment paper.
  7. Arrange the plums on top of the batter, pressing them in slightly. If you like, sprinkle with a little brown sugar.
  8. Bake the cake for about 40-45 minutes or until golden and a toothpick inserted in the center comes out clean.

Once out of the oven, let the cake cool before serving. This cake can be enjoyed on its own or accompanied with a scoop of vanilla ice cream or a dusting of powdered sugar.
