Savory Potato and Sausage Pie

Ingredients
- 1 roll of puff pastry or shortcrust pastry
- 3-4 medium potatoes
- 250 g sausage
- 1 small onion
- 100 g grated cheese (pecorino, parmesan or other to taste)
- 2 eggs
- 100 ml cooking cream
- Salt and pepper to taste
- Extra virgin olive oil
- Butter for greasing the pan
- Fresh rosemary (optional)
- Nutmeg (optional)
Preparation
- Preheat the oven to 180 °C (350 °F).
- Peel the potatoes and cut them into thin slices. Steam or boil them until soft but still firm. Let them cool.
- Meanwhile, remove the casing from the sausages and crumble the meat.
- In a pan, sauté the finely chopped onion with a little oil. When golden, add the crumbled sausage and cook until well browned. You can also add some chopped rosemary to enhance the flavor, if you like.
- In a bowl, beat the eggs with the cooking cream, add the grated cheese, salt, pepper, and a pinch of nutmeg to taste.
- Butter and flour a savory pie pan. Roll out the puff pastry or shortcrust into the pan, prick the bottom with a fork, and arrange a layer of potatoes on the bottom.
- Evenly distribute the sausage and onion sauté over the potatoes.
- Pour the egg and cream mixture over the potato and sausage filling.
- Add a second layer with the remaining potatoes, and if desired, sprinkle with more grated cheese.
- Bake for about 30-40 minutes, or until the surface is golden and the pastry is cooked.
