Savory Pumpkin Tart
17/11/2023The savory pumpkin tart is a delicious autumnal dish that can be prepared both as an appetizer and as a main course. Here is an Italian version of this recipe.
Ingredients
- 1 roll of brisée pastry or puff pastry
- 600 g of pumpkin, already cleaned
- 200 g of ricotta
- 100 g of grated parmesan
- 2 eggs
- Salt and pepper to taste
- Nutmeg to taste
- Extra virgin olive oil
- Chives for garnish (optional)
Preparation
- Preheat the oven to 180 °C.
- Cut the pumpkin into cubes and place them on a baking tray lined with parchment paper. Season with a drizzle of oil, salt and pepper, and mix well. Bake for about 20-30 minutes or until the pumpkin is soft.
- Remove the pumpkin from the oven and let it cool slightly.
- In a bowl, mash the pumpkin with a fork, forming a coarse puree.
- Add the ricotta, grated parmesan, eggs, a grating of nutmeg, salt and pepper to taste. Mix all the ingredients until you obtain a homogeneous mixture.
- Roll out the brisée pastry in a tart pan previously greased or lined with parchment paper, and prick the bottom with a fork.
- Pour the pumpkin filling onto the pastry base and level with a spatula.
- Bake for about 35-40 minutes or until the surface is golden and the brisée pastry is crispy.
- Once cooked, let it rest for a few minutes before serving. You can garnish with chopped chives for a touch of color and flavor.
