Schiacciatine with Bresaola and Arugula

Schiacciatine with bresaola and arugula are a light and tasty appetizer, perfect for an antipasto or aperitivo. Here’s how to proceed:

Ingredients

  • Schiacciatine (small flat focaccias)
  • Thinly sliced bresaola
  • Fresh arugula
  • Parmesan shavings
  • Extra virgin olive oil
  • Lemon
  • Salt and pepper to taste

Preparation

  1. Start by arranging the schiacciatine on a serving plate.
  2. On each schiacciatina, place a few slices of bresaola, trying to keep it soft and not too flattened.
  3. Add the arugula, previously washed and dried. The amount of arugula can vary according to your taste: for example, you can create a small bed of arugula on which to place the bresaola.
  4. Using a vegetable peeler or a suitable knife, obtain Parmesan shavings and distribute them over the schiacciatine with bresaola and arugula.
  5. Dress with a drizzle of extra virgin olive oil, a pinch of salt and a grinding of black pepper.
  6. For a touch of freshness, you can add a little lemon juice before serving.

Notes:

This dish is a perfect fusion of typically Italian ingredients: bresaola, which is aged beef from Valtellina, arugula with its slightly spicy flavor, and Parmesan, a PDO cheese known worldwide. A simple yet effective combination of flavors that highlights the quality of the ingredients.
