Shrimp and Pistachio Lasagna

Ingredients
- 250 g lasagna pasta (fresh or dry that requires pre-cooking)
- 400 g cleaned shrimp
- 200 g unsalted pistachios
- 200 ml cooking cream
- 100 ml dry white wine
- 1 garlic clove
- Parsley to taste
- Extra virgin olive oil
- Salt and pepper to taste
- Grated Parmesan (optional)

Start by shelling the shrimp, if you haven’t already, and set aside the heads and shells to make a stock, if desired.

Finely chop the pistachios. You can leave a few whole to garnish the dish before serving.

In a pan, sauté a garlic clove with extra virgin olive oil, then add the shrimp. Let it cook for a minute, then deglaze with the white wine. Allow it to evaporate.

Add the cooking cream and half of the chopped pistachios. Cook over medium heat for a few minutes until you get a creamy sauce. Adjust salt and pepper to taste.

In a large pot, bring salted water to a boil and cook the lasagna sheets if using dry ones that require pre-cooking. If using fresh pasta, you can skip this step. Drain the lasagna sheets and lay them on a clean cloth to dry.

Take a baking dish, lightly grease it with extra virgin olive oil, and start assembling the lasagna by alternating layers of pasta, shrimp and pistachio sauce, and a sprinkle of Parmesan if using.

Finish with a layer of sauce and a handful of chopped or whole pistachios.

Bake in a preheated oven at 180 °C for about 20 minutes or until the surface of the lasagna is golden and crispy.
