Shrimp and Potato Meatballs
17/11/2023Here is the recipe for delicious Italian-style shrimp and potato meatballs.
Ingredients
- 300 g cleaned shrimp
- 400 g potatoes
- 1 egg
- 40 g grated Parmesan
- Fresh chopped parsley
- Salt and pepper to taste
- Breadcrumbs as needed
- Oil for frying
Preparation

Start by boiling the potatoes in salted water until tender. Once ready, peel them and mash with a potato masher until you have a puree.

Meanwhile, cut the shrimp into small pieces (if you prefer, you can also roughly chop them with a knife or a food processor).

In a bowl, combine the potato puree with the chopped shrimp. Add the egg, Parmesan, fresh chopped parsley, salt and pepper to taste. Mix well until you obtain a homogeneous mixture.

Take portions of the dough and shape into meatballs. If the dough is too soft, you can add a little breadcrumbs to absorb the moisture.

Roll the meatballs in breadcrumbs until evenly coated.

Heat plenty of oil in a pan and, once hot, fry the meatballs until golden and crispy on all sides.

Drain on paper towels to remove excess oil.

Serve the shrimp and potato meatballs hot, perhaps accompanied by a truffle sauce or simple mayonnaise.
