Strawberry and Cream Roll

The strawberry and cream roll is a fresh and delicious dessert, perfect for spring and summer. Here’s how to prepare it.

Ingredients

  • 4 eggs
  • 120 gr sugar
  • 120 gr 00 flour
  • 1/2 teaspoon baking powder
  • 1 pinch of salt
  • 250 ml fresh whipping cream
  • 50 gr powdered sugar
  • 300 gr strawberries
  • Powdered sugar for dusting

Preparation

  1. Start with the base of the roll. Preheat the oven to 180 degrees C. Separate the egg whites from the yolks. Whip the egg whites to stiff peaks with the pinch of salt.

  2. In another bowl, beat the yolks with the sugar until you obtain a light and frothy mixture. Then gradually add the flour sifted with the baking powder, incorporating it gently with a spatula.

  3. Fold the whipped egg whites into the yolk, sugar, and flour mixture, stirring from the bottom up to avoid deflating them.

  4. Pour the batter onto a baking tray lined with parchment paper and spread evenly. Bake for about 10-12 minutes or until golden and soft to the touch.

  5. While the base is baking, cover another sheet of parchment paper with granulated sugar. As soon as the sponge cake is cooked, turn it out onto the sheet with the sugar and gently roll it up on itself together with the paper. Let it cool completely.

  6. For the filling, whip the fresh cream with the powdered sugar until you obtain a firm cream. Wash and cut the strawberries into small pieces, setting some aside for decoration.

  7. Gently unroll the now-cooled sponge cake, spread an even layer of whipped cream, and distribute the cut strawberries over the entire surface.

  8. Roll the filled sponge cake back up, wrapping it in plastic wrap to help give it a compact shape. Refrigerate for at least an hour before serving.

  9. Before serving, dust the roll with powdered sugar and decorate with the reserved strawberries.

Italian Variations: For an even more Italian version, you can enrich your roll with a bit of mascarpone mixed into the whipped cream. If desired, you can also add a touch of liqueur, such as Grand Marnier or limoncello, to the strawberries to flavor them.
