Strawberry and Cream Roll

Ingredients
- 4 eggs
- 100 g of sugar
- 100 g of 00 flour
- 1 packet of vanillin or a teaspoon of vanilla extract
- Pinch of salt
- Powdered sugar (for decoration)
- 250 ml of whipping cream
- 2 tablespoons of powdered sugar (for the cream)
- 300 g of fresh strawberries
Preparation
- Preheat the oven to 180 °C and line a baking tray with parchment paper.
- Separate the yolks from the whites. Whip the egg whites to stiff peaks with a pinch of salt.
- In a separate bowl, beat the yolks with the sugar until you have a foamy and light mixture, then add the vanillin.
- Gently incorporate the sifted flour into the yolk and sugar mixture, mixing from bottom to top to avoid deflating the mixture.
- Gradually add the whipped egg whites, combining with gentle movements to avoid deflating everything.
- Pour the mixture into the prepared baking tray, leveling it with a spatula to obtain a uniform thickness.
- Bake in the oven for 10-12 minutes, until the roll is golden and soft to the touch.
- Once cooked, immediately turn the sponge cake onto a damp cloth and gently roll it out. Remove the parchment paper and roll the sponge cake together with the cloth. Let it cool completely.
- Meanwhile, whip the cream with two tablespoons of powdered sugar until it is firm.
- Cut the strawberries into pieces, leaving some whole for the final decoration.
- Gently unroll the cold sponge cake, spread the whipped cream on top and distribute the cut strawberries.
- Roll the sponge cake again filled with cream and strawberries, this time without the cloth.
- Wrap the roll in plastic wrap and let it rest in the refrigerator for at least an hour before serving.
- Before serving, decorate with powdered sugar and the strawberries set aside.
