Sunny Side Up Eggs

Sunny side up eggs are a classic simple and quick dish to prepare. Here’s how to make them.

Ingredients

  • 2 fresh eggs
  • Salt to taste
  • Freshly ground black pepper to taste
  • Olive oil or butter

Preparation

  1. Heat a non-stick pan and add a drizzle of olive oil or a knob of butter.
  2. When the oil or butter is hot, carefully crack the eggs directly into the pan, being careful not to break the yolks.
  3. Let the eggs fry over medium-low heat.
  4. Season the eggs with a pinch of salt and freshly ground black pepper.
  5. You can choose to leave the yolk soft or cook the eggs for a longer time if you prefer a firmer yolk.
  6. When the whites are completely cooked and the yolk has reached the desired consistency, use a spatula to transfer the eggs to a plate.

Sunny side up eggs are called that because the yolk in the center of the white resembles a bull’s eye. They are also known in English as “sunny side up” for the way the yolk appears like a shining sun. In Italy, it is common to accompany sunny side up eggs with a slice of toasted bread, to use as a support for the soft and creamy yolk.
