Super Soft Pangoccioli

Pangoccioli are an Italian version of classic sweet buns with chocolate chips, very similar to American chocolate chip buns. Here is the recipe to prepare super soft Pangoccioli.

Ingredients

  • 500 g Manitoba flour (or 250 g 00 flour and 250 g Manitoba)
  • 125 ml warm whole milk
  • 100 g sugar
  • 100 g soft butter
  • 2 medium eggs
  • 25 g fresh brewer’s yeast or 7 g dry brewer’s yeast
  • 1 pinch of salt
  • 1 packet of vanillin or the seeds of one vanilla pod
  • 150-200 g chocolate chips
  • Grated zest of 1 orange (optional)
  • Milk and sugar for brushing (optional)

Preparation

  1. Dissolve the brewer’s yeast in the warm milk together with a teaspoon of sugar taken from the total.
  2. In a large bowl, pour the sifted flour and make a well in the center where you will add the yeast dissolved in the milk and begin to mix.
  3. Add the eggs, the remaining sugar, the salt, the vanillin or vanilla seeds and, if desired, the grated orange zest. Begin kneading vigorously.
  4. When the dough starts to take shape, add the soft butter in pieces and continue working until you obtain a smooth and elastic mixture.
  5. Incorporate the chocolate chips, mixing gently to distribute them evenly.
  6. Let the dough rise covered in a warm place away from drafts for about 2 hours, or until doubled in volume.
  7. Once the rising time has passed, take the dough and divide into portions of about 80 g each, shaping the pangoccioli and placing them on a baking tray lined with parchment paper.
  8. Let rest for another 30 minutes, after which, if you prefer, you can brush each pangocciolo with a little milk and sprinkle it with granulated sugar.
  9. Bake in a preheated oven at 180 °C for about 15-20 minutes or until golden brown.
  10. Remove from the oven and let cool on a wire rack before serving.

Pangoccioli are perfect for a soft and indulgent breakfast or for a snack for the whole family. Remember to use good quality chocolate chips for an optimal result.

The term “Pangoccioli” is a registered trademark of a well-known Italian brand that was the first to produce these sweet buns. However, the homemade recipe allows you to obtain a similar product, and often even more fragrant, than the industrial one.
