  • 100 g melted butter

  • 150 ml water

Preparation

  1. Start by preparing the base. Finely crush the coconut cookies and mix them with the melted butter. Spread this mixture on the bottom of a springform pan previously lined with parchment paper and press firmly to create a compact layer. Refrigerate to harden the base.

  2. For the first layer, soak the gelatin sheets in a bowl of cold water to soften. Meanwhile, whip the cream and gently mix the ricotta with the powdered sugar and shredded coconut.

  3. Squeeze out the softened gelatin and dissolve it in a small saucepan with a couple of tablespoons of water. Let it cool slightly, then incorporate the gelatin into the ricotta cream, followed by the whipped cream, folding gently from top to bottom to avoid deflating the mixture.

  4. Pour the mixture over the cookie base and let it set in the refrigerator for at least 1 hour.

  5. For the raspberry layer, soften the gelatin again in cold water. Place the raspberries, water, and sugar in a saucepan and cook over medium heat until you obtain a sauce. Strain to remove the seeds and add the squeezed gelatin to the still-warm sauce. Stir until completely dissolved.
