Yeast-Free Pumpkin Fritters
17/11/2023Pumpkin fritters are a simple and tasty dish, perfect for autumn, but which can be made at any time of the year. Here’s how to prepare yeast-free pumpkin fritters, to still achieve a pleasantly soft and flavorful result.
Ingredients
- 300 g cleaned pumpkin
- 2 eggs
- 120 g 00 flour
- 40 g grated parmesan
- Salt to taste
- Nutmeg to taste
- Oil for frying
Preparation

Start by preparing the pumpkin: cut it into pieces and cook it so that it can be easily mashed. You can steam it, bake it, or boil it in lightly salted water, until it is tender.

Once cooked, drain the pumpkin well to prevent it from releasing too much water into the fritters, then mash it with a potato masher or blend it to obtain a puree.

In a bowl, mix the pumpkin puree with the eggs, grated parmesan, a pinch of salt, and a bit of grated nutmeg to flavor.

Add the flour little by little, mixing well to avoid the formation of lumps. You should obtain a homogeneous and fairly thick mixture.

Heat plenty of oil in a pan and, when it has reached the right temperature, use two spoons to scoop portions of the batter and drop them into the hot oil.

Fry the fritters until they are golden and crispy, turning them halfway through cooking to ensure they brown evenly.

Once ready, remove them from the oil with a slotted spoon and let them drain on kitchen paper towels to remove excess oil.
