Yogurt and Chocolate Chip Muffins

Ingredients

  • 250 g flour
  • 125 g plain yogurt (whole or low-fat both work)
  • 100 g sugar
  • 80 ml vegetable oil (or light olive oil if you prefer an Italian twist)

  • 1 packet baking powder
  • 1 pinch of salt
  • 100 g chocolate chips

Preparation

  1. Preheat the oven to 180 °C (static) or 160 °C (fan).
  2. In a bowl, beat the eggs with the sugar until the mixture is pale and frothy.
  3. Add the yogurt and oil and continue mixing.
  4. Fold in the sifted flour with the baking powder, the pinch of salt and the vanilla, stirring until you have a smooth batter.
  5. Finally, add the chocolate chips and gently combine.
  6. Line a muffin tin with paper cases and fill each one up to 3/4 full.
  7. Bake for about 20-25 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
