Yogurt and Fruit Ice Pops on a Stick

Here is a simple recipe to prepare yogurt and fruit ice pops on a stick, a fresh and healthy dessert perfect for the hot season.

Ingredients

  • 500 g Greek or whole yogurt
  • 3 tablespoons of honey (or other sweetener to taste)
  • 1 teaspoon of vanilla extract (optional)
  • Fresh fruit of your choice (for example strawberries, blueberries, mango pieces, bananas, kiwi)
  • Wooden popsicle sticks

Preparation

  1. In a bowl, mix the yogurt with the honey and vanilla extract until you obtain a homogeneous cream.
  2. Wash and cut the fruit into small pieces suitable for threading onto the sticks.
  3. Get some popsicle molds. If you don’t have the specific molds, you can also use paper cups or empty yogurt containers.
  4. Place some of the cut fruit at the bottom of the molds.
  5. Pour the yogurt and honey mix over the fruit until filling the mold, leaving a small space from the edge to allow the ice cream to expand during freezing.
  6. Add more pieces of fruit if desired, distributing them so they are visible when the ice cream is frozen, for a more decorative effect.
  7. Insert a wooden stick into each mold, making sure it protrudes enough to be grabbed later.
  8. Place the molds in the freezer and let them freeze for at least 4-6 hours or until the ice cream is completely solid.
  9. Once the ice cream is frozen, remove the popsicles from the molds. If you have difficulty, you can run the molds under hot water for a few seconds to help release the ice cream.
  10. Serve immediately or store the ice pops in the freezer inside an airtight container to prevent them from absorbing odors.

Popsicles have origins dating back to the early 1900s, and it is said to have been invented by chance by an American boy named Frank Epperson, who had left a mixture of sweetened water with a stick outside on a cold night. Years later, Epperson patented the idea and started selling this refreshing treat calling it “Popsicle”. Today, popsicles are popular in countless versions and flavors all over the world.
