Yogurt Swirls with Apricot Jam
17/11/2023Yogurt swirls with apricot jam are delicious and soft brioche spirals that wrap around a sweet and fruity heart. Here’s the recipe to make them.
Ingredients
- 500 g 00 flour
- 150 g sugar
- 1 packet dry brewer’s yeast (or 25 g fresh brewer’s yeast)
- 250 g plain natural yogurt
- 1 egg (plus 1 yolk for brushing)
- 50 g softened butter
- 1 pinch of salt
- Apricot jam
- Powdered sugar for garnish (optional)
Preparation

In a large bowl, sift the flour and mix in the dry yeast (if using fresh yeast, dissolve it in a little warm milk). Add sugar, yogurt, egg and start kneading. If using a stand mixer, use the dough hook for leavened doughs.

Add the pinch of salt and work the dough until it becomes homogeneous and starts to come together. Then incorporate the softened butter in pieces, one at a time, waiting for the previous one to be completely absorbed before adding the next.

Transfer the dough to a lightly floured surface and work it for a few more minutes. Then, form a ball and let it rise in a bowl covered with a cloth in a warm place away from drafts until it doubles in volume, about 1-2 hours.

After rising, gently roll out the dough on a floured surface until you get a rectangle about 1/2 cm thick.

Spread a generous amount of apricot jam leaving a free border of about 1 cm.

Roll up the dough on the long side, gently, to form a cylinder. Then cut the cylinder into slices about 2 cm thick.

Arrange the swirls on a baking tray lined with parchment paper, well spaced from each other, and let them rise again for about 30 minutes. Meanwhile, preheat the oven to 180 °C.

Brush the surface of the swirls with a beaten egg yolk and bake in the oven for about 20 minutes or until golden.

Once baked, let the swirls cool on a wire rack and if desired, dust with powdered sugar before serving.
