Zucchini Skewers

Ingredients

  • 2 large zucchini
  • Extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • Dried oregano to taste
  • Lemon juice
  • Grated Parmesan (optional)
  • Aromatic herbs of your choice (for example, rosemary or thyme)

Preparation

  1. Wash the zucchini and cut them into rounds about half a centimeter thick.
  2. Place the zucchini slices in a bowl and season them with extra virgin olive oil, salt, pepper, oregano and a bit of lemon juice. Mix well to flavor each slice.
  3. Heat a grill or grill pan over the fire.
  4. Thread the zucchini rounds onto skewers, alternating them if desired with aromatic herbs like rosemary or thyme leaves to add aroma and flavor.
  5. Grill the skewers on each side until the zucchini are lightly golden and tender, for about 2-3 minutes per side.
  6. Once ready, you can serve them hot and, if desired, with a sprinkle of grated Parmesan for an even more Italian touch.
